In the IV century BC Hippocrates in the Diet wrote: "Our food should be a medicine, and the medicine must be food". However, cooking, preserving food with the help of microorganisms and damaging it are two sides of one process. Teaching training courses in microbiology in the field of food safety should provide the graduate with a set of knowledge necessary for professional work in modern conditions.
